Anyone know what maximum size tire I can put on the rear of the GT using stock rims?

Rim Width ...

It is the narrow width of the stock rims that limit your choice rather than room under the guards.
Have a look at the charts on the wall at your local tyre shop - they always show which tyres require what rim width.
The stock 165/80 X 13 fit well and give good ride and handling but 175/70 X 13 or 185/70 X 13 will fit and give a slightly wider tyre - don't forget to check out the diameter of the tyre as well since this affects the speedo reading. All that info is on the tyre charts as well.
