I am about ready to begin restoring one of the two Opel's I have. I drive a 72 and bought a 73 as a parts car for the restoration. I have read and heard some things that make me think that the 73’s are the better car to restore. For example, the doors are re-enforced and the fuel system was designed better. Could I please get some feedback on which one would be the better car to have and drive?

Just restore the car with the better body shell, it will be easier in the long run. Most any parts from the '73 can be swapped to the '72, so that's not a strong enough point to consider one car over the other. Choose the car that's easier for you to restore. The '73 fuel system has a return line (fuel vapor) from the fuel filter, and a charcoal cannister...don't know if that makes it 'better', just different.
