A six pot caliper is probably overkill. Most are designed for larger diameter rotors, so the pads will have a different size and outer radius. On these very large pads, there can be some benefit to a 6-pot caliper as the clamping pressure will be more evenly distributed over the large surface area of the pad.
I have fitted a 10.5" diameter racing rotor under a 13" wheel before. Opel however, homologated a 10.75" rotor for the old Group 2 Ascona-A rally cars, and for the Group 4 Conrero GT's. I suspect very few 13" wheels will clear those rotors, and the calipers must be carefully chosen as well.
Another rotor I've adapted was a 10.25" Chrysler rotor from a 1984 Omni Turbo. It required a custom spacer and some machining, but I was able to offset the rotor enough to clear most 13" wheels, even some of the steel ones.
